Rev Up Your Weight Loss Challenge…Update!

I am almost half way through iVillage’s Rev Up Your Weight Loss Challenge and I have to say, it is going very well!  The exercise part feels like a regular habit at this point.  Why couldn’t I commit to exercising daily when I wasn’t committed to this challenge? I don’t completely have the eating healthy part down, but I’m almost there. It doesn’t help when you’re nominated for Chocoholic of the Year, either…*ahem.*

I did manage to make a two week meal plan that we are semi sticking to.  It is nice to not have to ask the question back and forth, “So what do you want for dinner?” “I don’t know, what do you feel like having?”  And then end up with bagels and cream cheese.  I will brag say that my entire family loves salad and I plan on doing a vlog soon about getting your kids to love salad, too.  We are a vegetarian family, and since many of my friends are incorporating a certain percentage of vegetarian meals into their diet as a New Year’s resolution (80-20%, 60-40%, etc.), I’m posting my current list of veggie meals:
#1 Vegetable Stir Fry with Tofu over a Brown/White Rice Mix
#2 Black Bean Soup with Corn Bread
#3 Salad Bar
#4 Make Your Own Pizza w/ Veggie Toppings
#5 Black Bean Empanadas w/ Sour Cream and Kid-Friendly Salsa
#6 Roasted Veggies with Quinoa
#7 Pasta w/ Red Sauce or Pesto and Tofu crumbles + Garlic Bread
#8 Sandwich Bar
#9 Lentil Soup w/ Tortillas
#10 Marinated Baked Tofu, Steamed Broccoli, and Brown/White Rice Mix + Seaweed
#11 Veggie Enchiladas w/ Spanish Rice and Pinto Beans
#12 Baked Potato Bar
# 13 Veggie Dogs, Maple Beans, and Corn on the Cob
