Wordless Wednesday- YUM!

I know this is Wordless Wednesday, but I didn’t want to leave you on the hang and get bombarded with comments about what exactly this is. So, I’ll tell you…this has been my lunch or dinner at least every other day for about two weeks. It is so quick, easy, beautiful, and delicious, I just have to share.


4 ingredients. And the first 3 can be bought at Trader Joe’s. Start with toasted naan bread (they even have flavors like garlic and tandoori). Spread Indian food of your choice on top (I love TJ’s frozen Palak Paneer, but they also have Chana Masala, and two others, including chicken). Drizzle with raita (TJ’s makes the best that I’ve ever had!). Top with mango chutney, or any flavor you like (yes, TJ’s has a couple, but I haven’t tried them yet). Pick it up and eat it, kinda like a pizza!


So far, my kids have approved of the naan bread and raita, but all in due time. If they see this creation often enough, they’ll never remember a time when it wasn’t in their lives, and it’ll become like salad: they miraculously eat it without complaint!   


I don’t yet have a name for the above, but if you replace all the ingredients with their Mexican counterparts (thick corn tortilla, beans, sour cream, and salsa), it comes mighty close to huaraches!

Yummy!!! I love their naan! My sister makes delicious little pizzas on them. Trader Joe's is the bomb!

Yes! I think toasted is key Sharon. I got these plates at Cost Plus.
